I’ve always been a “whipped topping” girl. I’d prefer whipped topping to frosting on my cake any day. But did I ever read the label? Did I know what I was eating?
Nope…well not the ingredients at least. The old me just looked at the calories and fat content. The “lite” version was particularly appealing with almost no fat and few calories. I baked it into “low fat” and “low calorie” cookies and baked goods I found on Pinterest all the time. Hey, I didn’t know any better.
But now I read the label and….
Water, Corn syrup (likely GMO), as if that wasn’t enough they have High Fructose Corn Syrup as well (Wow Bonus! Likely GMO), Hydrogenated Vegetable Oils (likely GMO), Sodium Caeinate (from milk…this is the only hint of dairy on the list), artificial flavor, xanthan gum, guar gum, polysorbate 60, sorbitan monostearate, disodium phosphate, natural flavor, sodium polyphosphate, beta carotene (color).
Urgh! Yuck! I don’t know what half of that is, nor how to pronounce them.
Looks to me like a tub of GMOs. Time to make my own I suppose. So, like most everything else, I ask Grandma. “I want to make whipped cream, do I just put some whipping cream in the blender ?”
She says “Well, yea. Just don’t whip it too long or you’ll have butter”
Really? It’s that easy? So when and why did our culture turn to the toxic junk in a tub?
So, I called the dairy that we get our milk from and requested whipping cream on our next delivery.
Once it arrived I gave it a try in the short cup of my Magic Bullet.
Wow, that was so easy. So I kept making it and tweaking it.
I make it mostly as a little treat to top the kid’s fruit salad. I also use it to top the kid’s pancakes since our son doesn’t fair well with maple syrup. The hubby likes it on top of his ice cream sundaes.
And this is what has evolved into my single serve recipe:
Single Serve Real Whipped Cream Topping
1/4 cup whipping cream
1/2 teaspoon organic cane sugar (or honey)
1/2 teaspoon real vanilla
Put all ingredients in blender and whip for 10-15 seconds. Do not over whip.
So good. So simple. Made from 3 natural ingredients. Win, Win, Win!
