Let me start by saying, I am NOT a coffee person. Not at all. I’ve tried to acquire the taste over several years. I’ve tried fancy flavored coffees at those fancy coffee shops, but have still never cared for coffee.
But after ditching the diet and regular sodas (need I explain…aspartame, HFCS, GMOs etc), I’ve been looking for alternative caffeine sources. I know, I should ditch them all, but unfortunately sometimes I still need a little jump start after staying up way too late (because with two kids, that’s when I get some done…after their bedtime).
So, I’ve turned to an occasional iced coffee drink. I’m not sure if it’s the large amount of milk, the chocolate flavor or the frozen consistency, but for whatever reason, I love this drink.
I have to say that in making it, I am also reducing waste. Yes, reducing waste.
You know how you make a pot of coffee and it seems to never get all used up? I know, my dad and many others would just reheat the leftovers but not my husband (the coffee drinker in our house). It has to be a desperate day for him to reheat the leftover coffee. That means that it ends up down the drain.
Well, it did at least, before I started snagging it and freezing it into coffee ice cubes.
I then use them for the following.
Quick and Easy Coffee Smoothie
6-7 coffee ice cubes
1 cup milk
1 tsp honey
1/2 tsp cocoa
Simply combine all ingredients in blender and mix until all ice cubes have been crushed smooth.
