I have already spoken about my husband’s need for portable morning treats in my Peanut Butter Oat Bar post. But not only does he need portable snacks to get him started in the morning, but he also needs some pick me up snacks to keep him going all day. I started making these several months ago when I discovered them through The Marathon Mom and they have been a staple ever since. They are fairly quick and easy to make, but I will warn you now…they require getting your hands sticky dirty. But I assure you, they are worth it. So roll up your sleeves and give them a try.
2 cups oats
2 cups coconut flakes
1 cup peanut butter (I make my own)
1 cup ground flax
1 cup chocolate chips
2/3 cup honey
2 teaspoons vanilla
Simply mix all the ingredients together. I do so effortlessly with my stand mixer.
Then scoop out bite sized portions from the bowl and roll into balls.
The chocolate chips will require a little extra attention and TLC while scooping and rolling. They tend to seek independence from the rest of the ingredients. But with a little attention they incorporate and stay put within the balls. However, I still seem to end up with some bonus chips left over in the bottom of the bowl after all the balls are formed…I just see it as a little tasty reward for my sticky efforts. I would never let chocolate go to waste 🙂
Store in the refrigerator.
As I make mine, I prepackage them into containers of 4-6 balls in each making them ready for my husband to grab in the morning and throw into his lunchbox.
I also love these for traveling. They are a good hold me over, for long road trips 🙂
