We have committed to eating cleaner, but that in no way means that we miss out on some old favorites…like nachos! There’s just something about warm flowing cheese over corn chips….Mmmmm!
We simply don’t buy the “cheese sauce” from a jar, can or make it from a block of “processed cheese product ” anymore. Instead, I make it from scratch using just 5 ingredients, including real cheese. And of course we serve it over organic (non GMO) corn chips.
I was really quite shocked when I started this journey at just how simple and quick it is to make cheese sauce. It has turned into a life saver for those days when I loose track of time and find that dinner time is upon us and I have nothing planned or prepared. I can make the sauce within minutes, chop up whatever veggies we have on hand for toppings, heat up any precooked meat that we have leftover in the fridge/freezer, and grab the bag of corn chips…done, dinner is on the table.

Here’s what you will need. And I usually double this recipe for my own family, since they love nachos, even leftover.
Nacho Cheese Sauce
2 T flour
2 T butter
1 t sea salt
1 cup milk
2 cups shredded cheese
Simply melt the butter, add in the flour and salt and stir.
Pour in the milk and mix thoroughly with the flour/butter mixture.
Add in the cheese a little at a time while stirring continuously until melted.
That’s it! Serve it alongside fresh onions, peppers, tomatoes…whatever your heart desires. Beef, chicken, or perhaps no meat at all. Maybe even some sour cream, homemade salsa or guacamole?! Your simple, last minute dinner is served!
