Sometimes, despite my best efforts, new food creations just don’t earn the approval of the household majority. Today was one such instance as I tried breading and baking some eggplant slices. My husband, son and myself weren’t too thrilled with them. No big loss since I picked up 3 little eggplants for only $0.68 on the quick sale rack. It was worth a shot at trying something new. I’m not sure if we just don’t have the taste for eggplant or if I lack the culinary skills to pull off eggplant (this is not my first failed attempt).
I may not have won the likes of the majority, but one little girl absolutely LOVED them! Although she thought they were cookies. While we all devoured the main dish of chicken fettuccine alfredo, she kept asking for more “cookies”. She must have eaten about 10 slices. Hey, whatever she wants to call them, as long as someone was willing to eat them, I’ll live with that.
Don’t be afraid to try new things in the kitchen…even if they sometimes fail. 😉
